Broken tip on Ceramic Knife to be repaired. REMEMBER, Ceramics cannot take coarse diamonds and "DRY SHARPENING" alone may or may not cause '"MICRO FRACTURES" that will cause the blade to break if dropped even lightly on a countertop or the floor.
Starting to repair broken tip. Wheel is 6000 grit Diamond wheel, turning @ 109 RPM in a WATER BATH.
This is about 2 minutes on the diamond wheel.
Here we are at about 5 minutes and tip is just about flat. Remember, the ceramic is about 3 or 4 times harder than Stainless. A stainless knife at this point would have been ground down about 1/2 inch and the ceramic has only been down about an eigth of an inch at this point. The diamond wheel, although very smooth is very aggressive.
The tip has been repaired and we now will start to sharpen the blade.
The knife is placed in the jig and because the edge is below the "Center of the wheel" the jig has to be set at about 50 degrees to "match" 10 degrees. This will put a 10 degree edge on the first side.
Then the knife is "turned over" to do the other side.
On stainless knives I can make just one or two passes of the blade to get a burr. With the ceramic, I have to make 10, 15 or even 20 passes and there will be no burr.
On ceramics there is no burr, No burr to feel nor remove.
